CINNAMON COOKIES

These Cinnamon Cookies are quick and easy to make. Tender, buttery, loaded with cinnamon flavor and covered in cinnamon sugar - these shortbread cookies are sure to become your new favorite cookie!

INGREDIENTS:

Shortbread Dough: 1 cup butter ½ cup powdered sugar 2 cups flour 1 teaspoon vanilla extract 1 tablespoon ground cinnamon ½ teaspoon salt Cinnamon Sugar: 1 tablespoon sugar 1 teaspoon ground cinnamon

Mix butter and powdered sugar until soft, fluffy and well combined.

In a separate bowl, mix together flour, vanilla, salt and cinnamon.

Mix well. You can start out using the machine, but then you will need to use your hands as well.

Work the dough until you can form it into a ball. But do not work it longer than absolutely necessary!

Roll out the dough into a long log.

Mix together cinnamon and sugar for the cinnamon sugar.

Roll the dough log in the cinnamon sugar.

Wrap dough in plastic and refrigerate for at least 30 minutes.

Bring out the dough and cut into slices about 1/6 inch thick.

Space out the cookies on a lined baking sheet.

Bake in the middle of the oven at 400°F for 10 minutes, until just slightly browned.

And that's it! Store them in an airtight container and they will be fine for several weeks in room temperature. Freeze them to keep them fresh for even longer!
