Make delicious Pistachio Muffins without pudding mix, all you need is 30 minutes, a few easy steps, and some common ingredients! With real pistachios both inside and on top this is a super moist muffin with a crispy, top.

1 cup butter 1 cup sugar 1 tsp vanilla extract 2 eggs 1¼ cups flour 2 tsp baking powder ½ tsp salt 1¼ cup shelled pistachios (divided) 1 cup milk

INGREDIENTS:

Place sugar, butter and vanilla extract in a bowl and mix until creamy and fluffy.

Add eggs and mix until fluffy again!

In a separate bowl, mix together flour, baking powder, salt and ground pistachios.

Add the dry ingredients to the batter together with the milk.

Mix until just combined - not more!

Scoop into muffin liners and top with chopped pistachios.

Bake at 400°F (200°C) for 18-20 minutes, until done!
