This easy recipe for Cinnamon Muffins is done in under 30 minutes - and the result is moist, delicious and packed with cinnamon flavor. Great as they are topped with cinnamon sugar, or without as a base for cupcakes.


2 cups flour 1.5 Tbsp ground cinnamon 1 tsp vanilla 2 tsp baking powder 1 cup butter 1 cup sugar 2 eggs 1 cup milk Cinnamon Sugar Topping 1 Tbsp sugar 1 tsp ground cinnamon

Place butter and sugar in a large mixing bowl.

Mix well, until creamy and fluffy.

Add eggs.

Mix well, until fluffy.

Place all dry ingredients in a separate bowl.

Mix until well combined.

Add dry ingredients to the batter.

Mix until well combined - but not more. Then add milk.

Mix again, until all is well combined. But don't overmix!

Place sugar & cinnamon for the topping in a small bowl.


Scoop the batter into a lined muffin tin.

Top with cinnamon sugar.

Bake for 16-18 minutes at 400°F (200°C).

Serve immediately or store for serveral days! Still soft & moist and delicious.
