STUFFED BELL PEPPERS

Make Mexican Ground Beef Stuffed Bell Peppers without rice in 45 minutes following my delicious, easy recipe. With tex-mex flavors from homemade or store bought taco seasoning and a cheesy topping, they're delicious served as they are or with a side of tortilla chips.

INGREDIENTS:

4 red bell peppers 1 Tbsp vegetable oil 1 lb ground beef 1/4 cup water 1/2 cup cream cheese 3/4 cup sour ream 3/4 shredded cheese + 2 Tbsp taco seasoning (recipe included)

Mix together taco seasoning if making your own (I highly recommend it!!)

Sear ground beef

Season the ground beef with taco seasoning

Pour over water, and simmer for 5 minutes

Add cream cheese & sour cream and mix

Mix and simmer until it's well combined

Prep the bell peppers by cutting of the top, and trimming the bottom so they can stand upright in an oven safe dish

Fill all the way up with the ground beef mixture

Top with shredded cheese

Bake at 400°F for 30 minutes, until the cheese is melted and golden

Serve on its own, or with a side of tortilla chips or rice!
