Mexican Potatoes

CRISPY SPICY

Make deliciously crispy & spicy Mexican Potatoes in just 45 minutes, in the oven or air fryer. Topped with lime & cilantro this is a yummy side dish with a spicy kick - at its best served with a cool sauce or sour cream.

INGREDIENTS:

1 lb potatoes 2 Tbsp olive oil 4 tsp Mexican spice mix (recipe included!) ½ lime (juice only) 1/2 cup chopped cilantro

Cut potatoes in quarters.

Mix together the spices for the spice mix, if making it from scratch.

Place potatoes in a shallow bowl and pour over the olive oil.

Add the spice mix.

Mix well!

Place on a lined baking sheet or in a preheated air fryer basket.

Oven: roast 30-40 minutes at 400°F (200°C) Air fryer: 20 minutes at 400°F (200°C) When done they should be crispy, but not burned!

Just before serving, squeeze over lime juice & top with fresh cilantro.

They're best served with a cool dip or sauce - simple sour cream will do!
