Easy Holiday Cookie Recipe!

These Russian Tea Cakes are a delicious holiday cookie that's so easy to make. Crunchy with chopped hazelnuts and sweetness  balanced by just a hint of salt. The whole family loves these cute cookies!

INGREDIENTS:

1 cup salted butter ½ cup powdered sugar 2¼ cups plain flour 2 teaspoon vanilla extract (or vanilla sugar) ½ teaspoon salt ¾ cups chopped hazelnuts After baking 1 cup powdered sugar

Mix room temperature butter with powdered sugar until it's all well combined and fluffy

Add the flour, vanilla extract and salt to the dough

Mix well. You can start with the machine, but then you will need to use your hands.

Add in the chopped hazelnuts

Mix well, using your hands

Work the dough until you can form it into a ball

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes

After 30 minutes, bring the dough out and roll it into 40 1-inch balls - try to make them as even in size as possible!

Place them on a lined baking sheet and bake in a pre heated oven for 10 minutes at 400°F

Bring them out from the oven and allow to cool for just 1-2 minutes - just until you're able to handle them!

Roll them in powdered sugar while still hot

Set aside, and allow them to cool down completely

When the cookies are completely cooled, roll them in powdered sugar yet again

And you are done! Store them in an airtight container - they will be at their best for about 1 week in room temperature. Freeze them to keep them fresh for longer!
