Hands-off, no-stir recipe!

SMOKED SALMON RISOTTO

30 minutes is all it takes to make this super easy no-stir Smoked Salmon Risotto that's loaded with amazing lemon and asparagus flavor. Not sure you can make a great risotto? Think again - it will quickly become your go-to dish and it's sure to impress any Valentine's Day date!

INGREDIENTS:

Butter Shallots Risotto Rice White Wine Fish Stock Parmesan Cheese Smoked Salmon Asparagus Fresh Lemon Juice Ground Black Pepper

Fry chopped shallots in butter

Add risotto rice

Fry until all or almost all of the butter has been absorbed, and the rice starts to look dry

Raise the heat to high and pour in the wine. Cook until almost all the liquid has evaporated.

Lower the heat to medium and add half of the lemon juice. Simmer for 1 minute.

Pour in the fish stock, stir once to mix well, and then do not stir until done!

Simmer for 16 minutes, until most of the liquid is gone and the rice is al dente. If you think it's "almost done" - it's done!

Gently mix in asparagus, and simmer 2 more minutes

Mix in the rest of the lemon juice

Season with black pepper

Remove from the heat, then mix in in shredded Parmesan cheese and smoked salmon. Let sit for a minute or so to allow the salmon to heat up. Taste test, and serve!

Serve with extra Parmesan cheese and a lemon wedge on the side!
