Easy Holiday Cookie Recipe!

These Butterball Cookies (or Snowball Cookies / Russian Tea Cakes) are easy to make and taste amazing. A given for Christmas and the Holidays, this is a cookie the whole family will love. With chopped hazelnuts for a crunchy touch and just a hint of salt to balance all that sweetness.

INGREDIENTS:

1 cup butter ½ cup powdered sugar 2¼ cups flour 2 teaspoon vanilla sugar (or vanilla extract) ½ teaspoon fine table salt ¾ cups hazelnuts For rolling 1 cup powdered sugar

Mix room temperature butter with powdered sugar until well combined and fluffy

Add flour, vanilla sugar and salt to dough

Mix well, using your hands if necessary

Add chopped hazelnuts

Mix well, using your hands

Work the dough until you can form a ball from it

Wrap the dough ball in plastic and refrigerate for at least 30 minutes

After 30 minutes, bring the dough out and roll into 40 1 inch balls

Place cookies on a lined baking sheet and bake in a preheated oven for 10 minutes at 400°F

Bring out the cookies from the oven and let them cool for just 1-2 minutes - just until you are able to handle them

Roll in powdered sugar while still hot

Set aside and allow to cool down completely

When completely cooled, roll them in powdered sugar once again

All done! Store in an airtight container, they will be at their best for about 1 week. Freeze them to keep them fresh for longer!
