5 ounces bacon ⅔ lb fresh chorizo sausage 2 garlic cloves 2 big handfuls fresh spinach ½ cup grated Parmesan cheese ¾ lb fresh tagaliatelle 1 cup pasta cooking water 1 tablespoon butter

Peel the skin off the sausage by making a cut into the skin and then pulling the skin off.

Place chopped bacon in a cold skillet or frying pan over medium-high heat. Cook until bacon is cooked through and has released some fat.

Add sausage and chopped garlic and cook until sausage is cooked  through. Stir often, and try to break the sausage pieces apart a bit while cooking.

Add the spinach

Allow the spinach to wilt, and mix in with the bacon and sausage. Then deglaze the pan with half a cup of pasta cooking water.

Add cooked pasta, grated parmesan cheese and the rest of the pasta water, and mix well. Add more pasta water if needed.

Taste test, adjust seasoning if needed, and you are ready to serve!
