with Cilantro & Lime

SALMON STIR FRY

This salmon stir fry is a quick, healthy, weeknight dinner that's done in just 20 minutes. With lots of veggies for a lighter stir fry with subtle flavors and a fresh touch from lime juice & fresh cilantro. A complete meal on its own, or serve with a side of rice or noodles.

INGREDIENTS:

½ lb salmon 1 Tbsp olive oil 2 Tbsp chopped shallots 2 garlic cloves 2 Tbsp fresh ginger 1.5 cup broccoli 1 cup carrots cut 1.5 cup zucchini ½ cup chopped fresh cilantro Marinade & Stir Fry Sauce 4 Tbsp fresh squeezed lime juice 3 Tbsp fish sauce 1 tsp sugar

Mix salmon cubes with fish sauce, lime & sugar. Marinate 15 minutes.

Sauté shallots, garlic & ginger until fragrant & softened.

Add broccoli & carrots and cook 5 minutes.

Add salmon and sear on all sides.

Mix everything together and add zucchini. Cook 1 minute.

Add the rest of the sauce and mix well.

Add cilantro.

Mix well, and serve!

This is a delicious meal on its own - or serve it with rice or noodles on the side!
