15-minutes and 6 simple ingredients is all you need to make this delicious Tortellini Carbonara. Following the traditional method for making creamy carbonara without cream, filled tortellini is what gives this recipe a fun new twist.

2 servings ham & cheese tortellini ¼ cup pasta cooking water ⅓ cup bacon 2 egg yolks ¼ cup Pecorino cheese ¼ cup Parmesan cheese ¼ tsp fresh ground black pepper

Place diced bacon in a cold pan over medium heat

Cook until bacon is cooked through but not crispy. Then set aside for now.

Place shredded cheese, egg yolks and black pepper in a small bowl

Mix well to create a paste

Bring out the pan again but do not place over the heat. Add in cooked tortellini and a bit of pasta water. Mix quickly.

Add the cheese and egg paste to the pan as well

Mix well, and add more pasta water as needed. Mix until the tortellini is coated in a creamy sauce.

Serev topped with extra cheese & fresh ground black pepper. Enjoy!
