⅓ lb dry ham & cheese tortellini ¼ cup pasta cooking water ⅓ cup bacon 2 egg yolks ¼ cup grated pecorino cheese ¼ cup grated parmesan cheese ¼ teaspoon fresh ground black pepper


Place chopped bacon in a cold pan

Place shredded cheese and fresh ground black pepper in a small bowl

Add egg yolks

Mix to create a paste

Fry for a few minutes until cooked through

Add cooked tortellini and a bit of pasta water

Mix, especially taking care to coat the tortellini with the bacon fat

Add the cheese and egg paste to the pan

Mix well until a sauce has been created, coating the tortellini. Add more pasta water as needed!

Serve topped with some extra cheese and crack some fresh black pepper on top!
