These Buffalo Cauliflower Tacos have all your favorite buffalo flavors in a neat taco packaging. Buffalo Cauliflower, avocado, blue cheese sauce & cilantro make this dish a winner very time. Easy to make in just 40 minutes in the oven or air fryer!
Place blue cheese, sour cream, mayonnaise and milk in a bowl and mix together with an immersion blender. Season with lemon juice, salt and pepper and taste test. Then cover and refrigerate for at least 30 minutes.
1 cup crumbled blue cheese, crumbled, ½ cup sour cream, 1 cup mayonnaise*, 1 tablespoon fresh lemon juice, ½ teaspoon salt, ½ teaspoon black pepper
Buffalo Cauliflower (oven method)
Preheat the oven to 430°F (225°C) and place parchment paper on a sheet pan.
Mix flour, salt, black pepper and garlic powder in a bowl, then mix in milk. Add cauliflower and mix well, making sure the pieces get covered on all sides.
½ cup flour, ¼ teaspoon salt, ¼ teaspoon black pepper, ¼ teaspoon garlic powder, ½ cup milk, 1 medium-sized head of cauliflower
Add the panko to the bowl, and mix well. Make sure the cauliflower pieces get covered on all sides with panko as well.
⅔ cups panko breadcrumbs
Spread out the cauliflower pieces on the sheet pan and make sure they are well separated. Bake in the middle of the oven for 20 minutes.
While the cauliflower is cooking you can prepare the buffalo sauce. Melt butter in a sauce pan and pour in the hot sauce while the butter is still hot on the stove. Mix well to an even consistency.
3 tablespoon salted butter, ½ cup hot sauce
After 20 minutes, remove the cauliflower from the oven and place in a bowl. Pour over the buffalo sauce. Toss, making sure to cover the cauliflower well, and then return to the baking sheet. Pour over any remaining buffalo sauce and place back in the oven for an additional 5 min.
Buffalo Cauliflower (air fryer method)
Mix flour, salt, black pepper and garlic powder in a large bowl, then mix in milk. Add cauliflower and mix well, making sure the pieces get well covered.
½ cup flour, ¼ teaspoon salt, ¼ teaspoon black pepper, ¼ teaspoon garlic powder, ½ cup milk, 1 medium-sized head of cauliflower
Add half of the panko breadcrumbs to the bowl, and mix well. Then add the rest and mix again. Make sure the cauliflower pieces get well covered with breadcrumbs as well.
⅔ cups panko breadcrumbs
Preheat the air fryer by running it for 5 minutes at 350°F (180°C).
Spread out the cauliflower pieces in the preheated air fryer basket, in a single layer. If they don't all fit you will need to air fry in batches. Air fry for 14 minutes, bringing out the basket once halfway and shaking to turn them. They are done when they are slightly browned at the edges and fork tender but still with some resistance.
While the cauliflower is air frying you can prepare the buffalo sauce. Melt butter in a sauce pan over medium, then mix in the hot sauce with the melted butter. Mix well to an even consistency.
3 tablespoon salted butter, ½ cup hot sauce
Place air fried cauliflower in a large bowl and pour over the buffalo sauce. Toss, making sure to cover the cauliflower well, and then return to the air fryer basket.
Air fry for 5 more minutes.
Buffalo Cauliflower Tacos
Place tortillas on a plate and top with spinach, buffalo cauliflower, avocado, fresh cilantro and blue cheese sauce. Serve with a wedge of lime and more blue cheese sauce and cilantro on the side.

Blue cheese: If you want to make these tacos vegetarian, make sure you choose a vegetarian blue cheese.
Tortillas: I like wheat flour tortillas for this recipe
Mayonnaise: Store bought is fine
Hot sauce: I always use Cholula or Frank's Red Hot, but any similar type will do
Ingredient substitutions & exclusions
Spinach can be swapped for another leafy green
Lemon juice can be switched for lime juice
Fresh cilantro & lime can be skipped, but add a nice extra dimension
Panko breadcrumbs can be swapped for regular breadcrumbs
Tips & tricks
Make the sauce first, if you have time, so the flavors can really set
If you're in a hurry - make the sauce while the buffalo cauliflower is in the oven or air fryer*
Choose your size of cauliflowerbites - larger will have more substance and less spice, smaller will be crispier and spicier. Adjust cook time depending on what size you choose, cook time stated in the recipe is for medium-sized pieces.

Just make as many tacos as you will eat for best storing of leftovers
Store leftover components separate if possible - store everything in air tight containers in the fridge and consume within 5 days
Reheat leftover buffalo cauliflower in the microwave in 30 second increments
