Ever tried a Blue Lagoon? Well, meet the Blue Lagoon Mocktail - a bit less sweet, a bit more sour, and with a bitter touch - and just as pretty and refreshing as the original. Best of all? You can make it in just 2 minutes with lemon, sprite & blue food coloring.
Peel the rind of the lemon with a potato peeler or small knife, and squeeze out the juice.
Place the rind and lemon juice in a highball glass and mash together using the muddler, to release the oils from the rind.
Add in the blue food coloring and mix.
Add in ice cubes and fill up with sprite. Garnish with a slice of lemon and a straw. Serve immediately!

Ingredient notes & substitutions
Blue food coloring can be skipped entirely or switched for another color. It can also be swapped for blue curacao syrup, which makes it a bit sweeter. Use 1 teaspoon of the syrup for one mocktail.
Sprite can be switched for any lemon/lime soda
Tips & tricks
Use a potato peeler to peel the rind of the lemon (you can also use a small knife)
A muddler is great to have, but the handle of a wooden spoon works almost as well
Make it less bitter by using less lemon rind or skipping it entirely
Make it less sour by adding less lemon juice
Change the color to match the theme of your party
Making it ahead of time? Just muddle the lemon and lemon rind and mix in the blue food coloring, and then add the ice and sprite just before serving.
