In just 2 minutes you can make this ginger beer mocktail using only 3 ingredients. Refreshing, sparkling and slightly sweet with lime, mint & ginger beer this is a grown-up drink - just without the alcohol.
Add lime wedges and mint leaves to a lowball/whiskey glass. Squeeze the lime wedges a bit before adding, to get some of the juice out from the start. Then muddle lime and mint until you've gotten most of the juice out of the lime.
½ lime, 20 small mint leaves
Add ice cubes and fill up with ginger beer. Decorate with a sprig of mint, and serve immediately!
⅔ cup non-alcoholic ginger beer, ice cubes, 1 sprig of mint

Notes
Ingredient notes & substitutions
Fresh mint leaves - only use the leaves, as the stem can be a bit bitter
Lime - only fresh lime will do here
Non-alcoholic ginger beer - use Ginger Ale instead for a sweeter and less spicy version
Tips & tricks
Don't muddle too much or the mint can become a bit bitter - this is why I squeeze the limes a bit while adding them
If you don't have muddler use the handle of a wooden spoon instead
Make it sweeter and less spicy by using Ginger Ale instead of Ginger Beer
Make it a cocktail by opting for an alcoholic ginger beer, or add a shot of your favorite spirit
