⅔ lb penne pasta 1 tablespoon butter 2 garlic cloves 1 lb chicken thigh filets ½ teaspoon fine table salt ½ teaspoon black pepper 2 tablespoon tomato paste 1 tablespoon dried basil 1 tablespoon paprika powder 1 teaspoon onion powder 1 teaspoon dried oregano 2 cups crème fraiche 1 cups sun-dried tomatoes


Melt butter in a large pan, then add the garlic cloves and cook for about 1 minute without them burning

Add chicken and season with salt and pepper

Cook for a few minutes, until just cooked through

Remove the chicken and garlic cloves from the pan and add the tomato paste, fry it for a minute to deepen the flavor

Add the dried herbs and mix

Add crème fraîche

Mix well until the crème fraîche is completely melted, while scraping the bottom a bit to loosen up all the tasty bits stuck there

Simmer for 3-5 minutes, or until the pasta is almost done, and then add the sun-dried tomatoes

Remove the garlic cloves from the cooked chicken, and add the chicken to the sauce

Mix well, then  add the pasta

Leave on the heat for 2 minutes, then taste test and add salt and pepper as needed

Serve topped with a little bit of extra dried basil - and enjoy your dinner!
