4 tablespoons butter 1 yellow onion 3 garlic cloves 10 white button mushrooms 1 lb chicken thigh filets 1 cup red wine 2 tablespoons concentrated mushroom stock 20 fresh thyme sprigs 1 cup cream ½ lb fresh tagliatelle pasta 1 cup pasta water 1 cup grated parmesan

Fry garlic and onion in butter for a few minutes, until fragrant and onion is softened

Add more butter and allow it to melt

Add sliced mushrooms. and cook for a few minutes. If the mushrooms start to look dry, add more butter.

Push the mushrooms to one side of the pan and add the chicken to the other side. Cook separately until the chicken has color on all sides, then mix it all together.

Raise the temperature and pour in the red wine. Simmer vigorously for 2 minutes until half the wine has evaporated.

Add cream, concentrated mushroom stock & fresh thyme sprigs

Mix well and simmer for 5-10 minutes. Meanwhile, cook the pasta, then drain it but make sure to reserve 1 cup of pasta water.

When the sauce is done simmering, remove the garlic cloves and thyme sprigs from the sauce

Mix in the Parmesan cheese

Mix in pasta and pasta water

Taste test, adjust seasoning if needed, and serve with some extra Parmesan on top!
