STUFFED CHICKEN BREASTS

This is an amazing dinner you can make in just 25 minutes. Loaded with Feta cheese, sun-dried tomatoes and fresh basil this is a dinner party worthy dish that's easy enough for a weeknight!

INGREDIENTS:

4 chicken breasts ¼ teaspoon salt ¼ teaspoon ground black pepper 1 tablespoon vegetable oil 1 tablespoon butter  ¾ cup Feta cheese 10 sun-dried tomatoes 2 tablespoon oil from the sun-dried tomatoes 1 clove garlic  30 leaves fresh basil ground black pepper 

Season chicken with salt & pepper and sear in a pan for a few minutes

It shouldn't be done, just get some nice colors on all sides

Place the ingredients for the filling in a bowl

Mix with an immersion blender or in a food processor, then taste test and adjust seasoning if needed.

Cut a pocket in the chicken breasts - as deep as possible without cutting through it!

Fill the pocket with the Feta cheese filling - as much as possibly fits!

Stack the chicken breasts up against the side of a baking dish, and bake at 400°F (200°C) for 15 minutes.

Check to make sure the chicken is done - the internal temperature should be at least 165°F (73°C).

And you are ready to serve with the sides of your choice. I recommend smashed potatoes & Whipped Feta Cheese!
