Tasty, healthy and done in just 15 minutes - that's this chicken salad loaded with Thai flavors such as fish sauce, lime, chili flakes and fresh mint & cilantro. Low in carbs as well as gluten and dairy free!

Start by mixing together all the ingredients for the sauce. Set aside for now.

Fry minced chicken in oil until cooked through.

Add chili flakes, shallots and scallions. Mix well.

Add the sauce, mix, and leave on the heat for 30 seconds, then remove from the heat.

Add cilantro, mint and chopped peanuts.

Mix well, and you are done!

Serve on its own or in lettuce cups as a salad - or add rice for a more filling meal. Enjoy!!
