This 10-minute avocado mango salad is a delicious, healthy side for any type of protein - and especially delicious next to a piece of grilled fish or chicken. Super easy to make with mango, avocado, lime and fresh cilantro, salted roasted peanuts are what sends this salad over the top!
Combine the mango and avocado in a bowl and squeeze over the lime juice. Add the chopped fresh cilantro, chopped salted roasted peanuts and crushed sea salt flakes. Mix well, and serve immediately.
1 ripe mango, 2 ripe avocados, ½ lime, ½ dl chopped fresh cilantro, 4 tablespoon roughly chopped salted roasted peanuts, ½ teaspoon sea salt flakes

This salad is best served fresh, but will keep in the fridge for a few days as well. The avocado might get a little bit brown, but it's still delicious.
Ingredient notes
Avocados should be nice and ripe, to maximize the flavor
Mango should be ripe, but I prefer if it's not too soft and still has a bit of acidity left
Salted roasted peanuts - yes, that's the kind you usually buy for a snack. They're usually vegan, but please make sure if making this for vegans.
Ingredient substitutions
Mango can be substituted for nectarines or pineapple
Sea salt flakes can be substituted for regular fine table salt at half the amount or another type of salt flakes at the same amount
Salted roasted peanuts can be substituted for another roasted, salted nut like macadamias or cashew nuts
Salted roasted peanuts can also be substituted for unroasted and/or unsalted nuts - it changes the flavor a bit, but you still get that nice crunch. Double the amount of salt if using unsalted nuts.
Lime can be substituted for lemon, with slight change to the taste. ¼ lemon is about the same as ½ a lime.
Cilantro can be swapped for another fresh herb like parsley, mint or basil.
Tips & Tricks
To keep the avocado from getting brown make sure to add the lime immediately after the avocados
Mix gently to avoid mashing the avocados
Taste test and adjust the seasoning to make it the perfect salad for your palate & what you will serve with it. For example, for fish you might want to add a bit more lime.
Make it into a salsa by chopping everything smaller. Delicious with fish tacos or on top of grilled fish!
