Place your lime wedges and mint leaves in the highball glass, squeeze in some of the juice from the lime wedges before adding them. Muddle together until most of juice has been released from the lime.
20 fresh mint leaves
Add in crushed ice, mix, and top with soda water. Decorate with a straw and a sprig of mint and serve immediately.

Tips & tricks
If you don't have a muddler
- use the handle of a wooden spoon instead
Don't muddle too much
as the mint leaves can turn bitter if they're too crushed - which is why I squeeze the lime a bit first
Make it sweeter
by swapping soda water for lemon/lime soda or adding sugar while muddling the lime and mint
Make it a cocktail
by adding a shot of rum (for a classic Mojito), vodka or bourbon together with the crushed ice
If you don't have an ice crusher,
crush ice cubes by placing them in a sealed plastic bag inside a clean kitchen towel, and then use a wooden spoon as a hammer to crush the ice.
