Potatoes Shallots Capers Parsley Dijon Mustard Red Wine Vinegar Vegetable Oil

Place chopped boiled potatoes and shallots in a large bowl.

Combine all the dressing ingredients in a jar and shake to mix.

Pour half of the dressing over the potatoes and shallots and mix.

Add in the parsley, capers, and the rest of the dressing and mix again. Then serve and enjoy!
