Fried Potatoes Breakfast Bowl with Feta Cheese & Poached Egg
Got leftover boiled potatoes? Then you need to make this fried potatoes breakfast bowl! It's done in 10 minutes and loaded with the best fried potatoes topped with a generous amount of slightly melted feta cheese and a perfectly poached egg. Cut into the egg and the silky yolk covers all that cheesy, salty, yumminess for a perfect bowl of breakfast.
Place a frying pan over medium-high heat and add in your butter. When melted and slightly browned, add in the potatoes and fry for a few minutes until nicely browned.
Lower the heat to medium-low. Push the potatoes to one side of the pan and season with paprika, sugar and salt. Mix well, and fry for about a minute. Set aside for now.

Poached Egg
Place your egg in a small bowl then bring a pot of water to a boil. Add in salt and vinegar and lower the heat so that the water is just almost simmering.
1 teaspoon salt, 1 egg, 1 tablespoon vinegar
Pour in the egg, keeping the bowl as close to the surface as possible. Once the egg is in the pot, you can use a spoon to gently guide the egg white around the yolk.
Let sit for 3-4 minutes, until the egg white is coagulated. Then scoop it out with a skimmer or spoon. Place in a bowl with ice water if you're not serving it immediately.
To serve
Bring out a bowl and place the fried potatoes in the bottom. Follow with the crumbled Feta cheese and top with the poached egg. Serve immediately!

Ingredient notes & substitutions
Feta cheese can be swapped for another Feta-style cheese or goat cheese
The egg should be as fresh as possible, as this makes poaching easier
Vinegar helps keep the egg white intact when poaching. It can be swapped for eddik or lemon juice, or skipped in a pinch.
Tips & tricks
Swap poached egg for a sunny-side-up fried egg or a soft boiled egg if you want to avoid poaching - you still get that silky, creamy, egg yolk
Place poached eggs in ice water if you aren't serving them immediately - this way they stop cooking and you still get a soft yolk
If poaching more than one egg - either make them one at a time and place in ice water until you're ready to serve, or poach multiple egg at once. The latter is quicker but more difficult to succeed with. If you do this, they will take 1-2 minutes longer to poach.
Always add something acidic when poaching eggs - I use eddik which is common in Sweden, but regular vinegar or lemon juice is also a good choice. This helps keep the egg white intact.
Add salt to your water to raise the boiling point just slightly, allowing for a higher temperature without the big bubbles
