These feta stuffed dates are one of my favorite appetizers ever. So quick and easy to make with just 2 ingredients, and they're always the one thing that finished first. Everyone loves them, so make sure to make a double batch.
Set the oven for 225 C/440 F and place a piece of parchment paper on a baking sheet.
Carefully remove the pit from the dates - taking care not to break the date apart too much. Place them on the parchment paper and stuff in a piece of feta cheese in each of the dates, facing up.
12 fresh Medjool dates*, 2 oz feta cheese*
Cook for 15 minutes or until cheese has softened and has a nice color.

Make sure they don't burn. Keep an eye on them in the oven, especially if your oven runs a bit hot. If you know your oven runs hot, lower the temperature by 10°C or 20°F. You really just want them to heat up, they don't need to "cook", so when they're golden you can just bring them out.Mix it up and make multiple versions. You don't need to stop at bacon wrapped and feta stuffed - you can also stuff them with goat cheese or blue cheese, or stuff them with cheese AND wrap them in bacon. You can also add nuts like chopped walnuts or pistachios for a crunchy variation.Prep ahead. You can stuff the dates with feta cheese and store in the fridge for up to 24 hours before baking.

Storing: Store leftovers in the fridge in an airtight container for up to 4 days.Freezing: I don't recommend freezing leftovers.Reheating in the oven: Place on a lined baking sheet and reheat 8-10 minutes at 300°F (150°C).Reheating in microwave: Reheat in the microwave in 30-second increments.
