Make this healthy Tom Collins mocktail in just 3 minutes with 3 ingredients. The most refreshing mocktail you'll ever have is just as delicious as the original - but less sweet. Cucumber, lemon & soda water is all you need!
Puree the peeled cucumber in a blender until there are no large cucumber pieces left.
½ cucumber
Pour cucumber puree and lemon juice into a shaker, close and shake for 15 seconds.
1 lemon
Place ice cubes in a highball glass and pour over the cucumber-lemon mixture. Top with soda water and decorate as desired. Serve immediately!

Ingredient notes & substitutions
Soda water can be switched for another unflavored sparkling water
Lemon needs to be fresh - save the bottled kind for something else
Cucumber - if you enjoy cucumber flavor it can be worth it splurging on a nice, organic and locally sourced cucumber as these tend to have more flavor
Tips & tricks
Make it sweeter by switching soda water for sprite
Make it less sour by reducing the amount of lemon juice
Make it a cocktail by adding a shot of gin or vodka before shaking
If you don't have a blender you can either puree your cucumber in a food processor or with a handheld immersion blender - or just smash it up with a muddler or something else you have on hand
If you don't have a shaker you can shake it in a glass jar instead (remember to close the lid tightly) and then strain into the glass, or strain the cucumber puree straight into the glass and then mix with lemon juice before adding ice cubes
If making it ahead of time wait to top up with soda water until just before serving
