VEGETABLE PAD THAI

This quick Vegetable Pad Thai is based on an authentic Pad Thai recipe, but unlike many meat-less versions it has broccoli and bell peppers, and no tofu. More good stuff, and still all the flavor!

INGREDIENTS:

Vegetable Oil Shallots Garlic Cloves Broccoli Bell Pepper Rice Noodles Eggs Bean Sprouts Spring Onions

Heat the oil in a large wok. Then add in the vegetables and fry until softened.

Add in the noodles and sauce and cook. Then add in the eggs and fry them.

Add in the bean sprouts and spring onions and cook together. Serve and top with chopped peanuts.
