Make the halloumi wraps that everyone loves - kids and foodies included! - and be the star of your next picnic or road trip. With halloumi cheese, red pesto (store-bought is fine), avocado and walnuts these wraps are packed with flavor, done in 20 minutes and super easy to make.
Fry the halloumi and set aside to cool. Make pesto if you're making it from scratch.
5 ounces halloumi
Place a tortilla on top of a sheet of aluminium foil and cover with 2 tablespoon of red pesto. Then add a small handful of arugula followed by 2 fried halloumi slices, ¼ sliced avocado and top with 2 tablespoon of roughly chopped walnuts. Fold together, wrap up (if you like) and you are done. Repeat until you've made all wraps.

Ingredient notes & substitutions
Flour tortillas - use whichever type of tortillas you like, be it flour, whole wheat, high fiber, gluten-free or corn tortillas
Arugula can be swapped for spinach or another type of leafy green
Red pesto is super easy to make yourself - but a cheap, store-bought red pesto works great for this recipe as well
Walnuts can be swapped for another type of nut like pine nuts or cashews, or skipped entirely
Halloumi can be swapped for a generic "grilling cheese"
Tips & tricks
Cook the halloumi in a dry grill pan - add it to the pan when cold, and then place over medium-high heat
Let the halloumi cool before adding to the wraps - while this is not absolutely necessary, it will keep them more delicious for longer
To make them healthier use high-fiber tortilla breads
If you're pesto is very oily try to get as little of that oil as possible in the wraps
Make the wraps directly on the aluminium foil, or whatever you want to wrap them in, to make clean-up & packing super easy
Place in a plastic bag after wrapping them, to catch any oil leakage from the red pesto
