These Buffalo Fries are loaded with crispy bacon, melted cheddar, tangy blue cheese, and pickled jalapeños, all topped with homemade buffalo dipping sauce! Ready in just 25 minutes using frozen, homemade or leftover fries, they're perfect for game day, parties, or just when you're craving something indulgent. Make them in the oven or air fryer!
Place chopped bacon in a cold pan and set the heat to medium-high. Cook until no more fat is releasing and the bacon is crispy, this takes about 8-10 minutes. Remove bacon from the pan and place on a paper towel to crisp up.

Cook the french fries according to your desired cooking method. You can also use leftover fries.

Make the buffalo dipping sauce by mixing together mayonnaise with hot sauce.
½ cup mayonnaise, 1 tablespoon hot sauce
Oven Method
Spread out french fries in an oven safe dish or on a baking sheet. Top with shredded cheese, crispy bacon and pickled jalapeños, then bake in the oven at 450 °F for 10 minutes, until cheese is melted and has started to brown.

Bring out the french fries and transfer to the serving plate of your choice, or keep in the baking dish. Top with crumbled blue cheese, sour cream, buffalo dipping sauce and sliced scallions, then serve immediately.

Air Fryer Method
Line the air fryer basket with aluminum foil. Spread out french fries on top, then top with shredded cheese, crispy bacon and pickled jalapeños. Air fry at 400 °F for 10 minutes, until cheese is melted and has started to brown.

Notes
Cook the bacon real crispy. If the bacon is not crispy it can make the fries a bit soggy - and also, crispy bacon adds such a nice crunch.Chop bacon and jalapeños really small. This distributes the flavor more evenly throughout the dish.Don't make more than you will finish. This dish is not good for storing. If you made too much fries, store those instead and make another batch of buffalo fries tomorrow!
