I love anything buffalo flavored, but sometimes I'm far too lazy to make something like wings, buffalo cauliflower or even buffalo shrimp. That's when I make these buffalo fries instead.
This is the easiest, laziest, way to enjoy your buffalo flavors. Just load up some fries, bake with bacon , cheese & jalapeños, then top with all your favorite buffalo toppings. And if you're really in a hurry? Skip the bacon, and it becomes even easier.
Top it all off with homemade buffalo dipping sauce - it's going to become your new favorite sauce.
And the result? Crispy, cheesy, creamy, spicy fries with layers of flavor and texture. Just the way I like it!

What French Fries to Use
You can make this with any type of French fries you like. Homemade, frozen and baked, frozen and fried... and if you have leftover fries, this is the absolute best way to use them!
I like thin cut fries for this, but you can also use thick cut fries. Or make it with potato wedges, waffle fries, curly fries, or sweet potato fries, or... whatever you like!
To Bacon or Not to Bacon
I love the added salty crisp from bacon, but I often make this without bacon as well, and it is still very tasty. So if you're really in a hurry (or just lazy, like me) or making this for vegetarians, just skip the bacon.
Make It Vegetarian
If you want to make this vegetarian, the obvious thing is to skip the bacon. But, you should also make sure you use cheese that is made without animal rennet. Both cheddar cheese and blue cheese are traditionally made with animal rennet, but you can often find similar cheeses that are not.
What Hot Sauce to Use
My go-to hot sauces for anything buffalo flavored are Frank's RedHot, Cholula, and Louisiana hot sauce. You can use other hot sauces as well, but I would aim for a similar version for that true "buffalo" flavor. Stay away from tabasco as it is too spicy.
You can use something like sriracha as well, but it will change the flavor of the dish.
How to Make the Best Buffalo Fries
1. Bake the Fries
Start by placing fries (leftover fries or cook them first) in a baking dish and topping with shredded cheese, crispy bacon and pickled jalapeños. Bake in the oven or air fryer for about 10 minutes, until cheese is melted.

2. Make the Sauce
While the fries are baking, make the buffalo dipping sauce by mixing together mayonnaise and hot sauce. Taste test as you go and use more or less hot sauce depending on how spicy you like it.

3. Load the Fries
When the fries are done, load them up with crumbled blue cheese, sliced scallions, sour cream and buffalo dipping sauce. Serve immediately!

Expert Tips for the Best Loaded Fries
Cook the bacon real crispy. If the bacon is not crispy it can make the fries a bit soggy - and also, crispy bacon adds such a nice crunch.
Chop bacon and jalapeños really small. This distributes the flavor more evenly throughout the dish.
Add your favorite toppings. I love this version but you can also make it with different toppings. Make it your own!
Serve with extras on the side. If serving this at a party, make sure to have some extra sour cream, buffalo dipping sauce, scallions and blue cheese for your guests to add as they like.
Don't make more than you will finish. This dish is not good for storing. If you made too much fries, store those instead and make another batch of buffalo fries tomorrow!

Buffalo Fries (Oven or Air Fryer)

Buffalo Dipping Sauce
- ½ cup mayonnaise
- 1 tablespoon hot sauce I like Franks, Cholula is also good; more or less according to taste

- If using your oven, preheat to 450 °F
- Place chopped bacon in a cold pan and set the heat to medium-high. Cook until no more fat is releasing and the bacon is crispy, this takes about 8-10 minutes. Remove bacon from the pan and place on a paper towel to crisp up.6 oz bacon
