Crispy Country Potatoes (Leftover Boiled Potatoes)
These crispy Country Potatoes turn leftover boiled potatoes into a diner-style side in just 15 minutes. All you need is one pan and a handful of pantry seasonings, plus a little sugar for extra caramelized edges.
3medium-sized boiled potatoescut in 1 inch (2.5 cm) pieces
1tablespoonolive oilor neutral oil or butter
½teaspoonpaprika
¼teaspoononion powder
¼teaspoonsugaroptional but recommended
¼teaspoonsalt
¼teaspoonground black pepperstart with half to make it less peppery
Instructions
In a small bowl, mix together paprika, onion powder, sugar, salt, and pepper.

Heat olive oil in a frying pan or skillet over medium-high heat and add in the potatoes and the seasoning. Cook for 5-7 minutes, until the potatoes are crispy on the outside and heated throughout.
3 medium-sized boiled potatoes, 1 Tbsp olive oil
Notes
If using freshly boiled potatoes, let them cool down before making this
Store leftovers in the fridge in an airtight container for up to 4 days
Reheat leftovers in a pan over medium heat or in the microwave in 30 second increments
Potatoes do not freeze well so I don't recommend freezing leftovers
