I've always loved diner potatoes, and finally perfected my own version. I make this almost every time I have leftover boiled potatoes (my other option is a Leftover Potato Casserole). And it's honestly so good I sometimes even boil some potatoes just to make it.'
That seasoning is on point and all using pantry staples - and a little bit of sugar helps the potatoes come out just a tiny bit caramelized. Always a plus in my book!
Whether you serve them for breakfast with bacon or poached eggs, or as a side for dinner - this recipe is a winner, and I am sure you will be coming back to it over and over again.
Just Potatoes + Pantry Staples
This recipe is perfect for using up leftover boiled potatoes, but you can also make it with fresh potatoes. Just boil and let them cool down before making it.
You Can Add Even More Flavor!
This recipe is so tasty as it is, but if you want to you can add even more flavor with these additions:
- Sliced yellow onion for more onion flavor (sauté before adding the potatoes and skip the onion powder)
- Sliced green or red bell peppers for flavor and color (sauté before adding the potatoes)
- Garlic. You can opt for garlic powder, but even better is to crush a garlic clove slightly so it's still in one piece, and let it cook together with the potatoes (just remember to remove it before eating!). It gives a mellow, delicious, garlic touch.
- Parsley or other greens. Mostly for decoration, but a little bit for taste as well. Sprinkle on top after cooking.
Just Season & Cook
This stove-top version is super easy to make, but you can also make them in your air fryer.
1. Season
Start by mixing together all the seasonings, this makes it easier to get it evenly distributed. Then heat olive oil in a pan, add the potatoes, and top with the seasoning.
2. Cook
Cook 5-7 minutes until the potatoes are golden and a bit crispy on the outside, and heated throughout. Serve!
What to Do with Leftovers
Storing: Store leftovers in the fridge in an airtight container for up to 4 days.
Freezing: Potatoes do not freeze well, so I do not recommend freezing leftovers.
Reheating stove top: Heat in a pan with some olive oil or butter over medium heat, until heated through.
Reheating in microwave: Reheat leftovers in the microwave in 30-second increments.

- 3 medium-sized boiled potatoes cut in 1 inch (2.5 cm) pieces
- 1 tablespoon olive oil or neutral oil or butter
- ½ teaspoon paprika powder
- ¼ teaspoon onion powder
- ¼ teaspoon sugar optional but recommended
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper start with half to make it less peppery

Recipe FAQ
I prefer to use pre-cooked potatoes for two reasons:
1. It saves time - I can have them already boiled and ready to go in the fridge
2. It makes it easier not to burn them - when frying raw potatoes it's always difficult to get them tender on the inside without burning them
I recommend adding a lot of salt to the potato cooking water, similar to when you cook pasta, to start seasoning the potatoes already while cooking.
You can use any type of potato, but a starchy kind will generally hold up best. If you can get new potatoes of any kind this makes for the most delicious country potatoes, but otherwise Yukon Gold and Russet potatoes are good options.
