I've always loved diner potatoes, and finally perfected my own version. I make this country potatoes recipe every time I have leftover boiled potatoes, and it's so good I might even boil up some potatoes just to make it!

What you need to make Country Potatoes
Ingredient notes & substitutions
- Boiled potatoes - start out with leftoves or boil them just for this
- Olive oil can be swapped for a neutral cooking oil. You can also use butter, but I prefer oil for this recipe.
- Sugar adds a tiny bit of caramellization to the potatoes, but can be skipped
- Ground black pepper: this recipe is a bit peppery, reduce the amount or start with just half to make it less so
Ingredient additions & variations
- Sliced yellow onion can be added for more onion taste
- Sliced green or red bell peppers are a tasty addition
- Crush a garlic clove slightly and let it cook together with the potatoes (just remember to remove before eating!) for a delicious garlic twist
- Garlic powder can also be used
- Parsley can be sprinkled on top after cooking
How to make it
- Place all the spices in a small bowl
- Mix well
- Heat olive oil in a pan over medium-high heat, then add potatoes and spice mix
- Fry for 5-7 minutes until potatoes are a bit crispy on the outside, and heated throughout
Tips & tricks
- Start with half the black pepper if you don't like it a bit peppery
- Let the potatoes cool before making this
- Store leftovers in the fridge in an airtight container for up to 4 days
- Reheat leftovers in a pan over medium heat or in the microwave in 30 second increments
- Potatoes do not freeze well so I don't recommend freezing leftovers
Recipe FAQ
I prefer to use pre-cooked potatoes for two reasons:
1. It saves time - I can have them already boiled and ready to go in the fridge
2. It makes it easier not to burn them - when frying raw potatoes it's always difficult to get them tender on the inside without burning them
I recommend adding a lot of salt to the potato cooking water, similar to when you cook pasta, to start seasoning the potatoes already while cooking.
You can use any type of potato, but a starchy kind will generally hold up best. If you can get new potatoes of any kind this makes for the most delicious country potatoes, but otherwise Yukon Gold and Russet potatoes are good options.
