This easy to make berry bake is filled with bananas, strawberries and blueberries and topped with white chocolate for a delicious red, white and blue dessert. Perfect for any holiday gathering - and great to prep ahead of time. Serve over vanilla ice cream for the ultimate, indulgent experience.
I don't often go for dessert - but when I do, it's almost always a "gino", as we call it in Sweden - basically a white chocolate covered fruit and/or berry bake served over vanilla ice cream. For this red, white and blue version it's loaded with berries - for a luxurious yet super easy dessert, that you can prep all the way hours before your guests arrive. (For a different, but equally easy, delicious & preppable verson - check out this gino fruit bake with banana, kiwi, raspberries and passion fruit.)
This version comes out as almost a sauce for your ice cream - a sauce filled with delicious sweet white chocolate and tart, flavorful berries, that is. Does it get any better??
Why you will love this berry dessert
- It's easy to make - just slice your banana, cut your strawberries in half, shred your white chocolate, place it all in a baking dish and bake for 10 minutes.
- It's quick to make - 10 minutes to prep (max!) and 10 minutes to bake.
- It's delicious with sweet chocolate mingling with sweet & tart berries, all served over melting vanilla ice cream.
- Everyone loves it - yes, honestly. This is a favorite of kids and adults, dessert lovers and "dessert-is-not-my-thing"-ers alike.
- You can prep it all the way hours before your guests arrive - just keep it in the fridge and then bake for 10 minutes when it's time for dessert.
How to make this recipe
I told you it was easy, didn't I? Well - that was entirely true. And all you need equipment-wise is a baking dish, a knife, and something to shred your white chocolate with.
- As for ingredients, you need a couple of sliced bananas (slice them about ½ cm or ¼ thick), strawberries with the hull removed and cut in half, whole blueberries and shredded white chocolate.
- Start by preheating your oven for 225 C/440 F. Then place your banana slices in the bottom of your baking dish.
- Follow with the strawberries cut in half.
- And then the blueberries.
- Finally, top with the shredded white chocolate. Then bake for 10 minuts - using the grill function for the last 5 minutes, if you have it. Otherwise just add 5 more minuts if it's not golden after 10 minutes.
- Then bring it out, and while still hot serve it together with vanilla ice cream.
Expert tips
- Switch up the banana & berries as you like - other great options to include are raspberries and kiwi but I bet you can find even more.
- Use the grill function on your oven to get that nice golden crisp on top.
- If it's not golden after 10 minutes - just give it five more minutes.
- Prep it ahead of time - just make it all the way until you're ready to stick it in the oven, then cover and place it in the fridge until it's time to bake.
