    Make this hands-off meal with just 8 ingredients, 10 minutes of prep and 20 minutes of cooking for a delicious dinner any night of the week. With soft gnocchi, crispy bacon, earthy mushrooms and crunchy pine nuts this is a flavorful dish that's sure to become a new favorite!

    This is the even easier, hands-off version of that recipe.

    Everything is baked on a sheet pan, all together, and then you just top with cheese, mix it up and serve.

    You Only Need 8 Ingredients

    Ingredients for sheet pan gnocchi.

    Fresh, Refrigerated or Frozen Gnocchi

    You can make this with any gnocchi you have - fresh, frozen or refrigerated. I generally use refrigerated. If it's frozen, just thaw it first.

    Add Some Texture

    I added pine nuts to this recipe to get some much needed texture. The mushrooms and gnocchi are both soft, and the bacon is crispy but not super crispy, so a nice crunch adds much-needed depth.

    Now, pine nuts are often quite expensive, and you can absolutely use something else, like chopped walnuts, as well. But if you can, use pine nuts, they go so well with the other flavors of this dish.

    Just 3 Steps & 30 Minutes

    1. Prep Everything

    Start by chopping mushroms and bacon. Then place gnocchi, mushrooms and pine nuts on a sheet pan and mix with oil and seasonings. Push it all to one side of the pan and add the bacon to the other side. This is to ensure the bacon gets some nice crisp!

    2. Bake

    Bake for 20 minutes, until bacon is cooked and crispy. Then add cheese!

    3. Mix It All Together, and That’s That!

    Yes, dinner is alreadye done!

    My Top Tips

    Do add something crunchy. It doesn't have to be pine nuts, but this dish really shines with a nice crunchy component, preferably some kind of nut or seed.

    Keep the bacon separated. This is to ensure you get a nice crisp on it. If you don't like crispy bacon, then skip this, but I'm guessing you prefer it all nice and crisp.

    Don't line your sheet pan. I've tried it both ways, and using a liner means the bacon will not crisp up as well and you won't get any crisp on the gnocchi.

    Storing, Freezing & Reheating Instructions

    Storing: Store leftovers in the fridge in an airtight container for up to 4 days.

    Freezing: Store leftovers in the freezer in an airtight container for up to 3 months.

    Reheating stove top: Cook in a little bit of oil or butter over medium heat, until heated through.

    Reheating in microwave: Reheat leftovers in the microwave in 1-minute increments.

    Ingredients

    • 1 lb gnocchi fresh, frozen or refrigerated; thaw first if using frozen gnocchi
    • 2 cups white button mushrooms sliced
    • â…“ cup pine nuts or chopped walnuts
    • 1 tablespoon olive oil
    • 1 teaspoon garlic powder
    • ½ teaspoon ground black pepper
    • 8 ounces bacon chopped
    • 1 cup shredded Parmesan cheese

    Instructions

    • Preheat your oven to 400 °F
    • Bring out a sheet pan and spread out gnocchi, mushrooms and pine nuts on top. Mix with olive oil, then season with garlic powder and ground black pepper. Mix well and push to one side of the pan.
      1 lb gnocchi, 2 cups white button mushrooms, ⅓ cup pine nuts, 1 tablespoon olive oil, 1 teaspoon garlic powder, ½ teaspoon ground black pepper
    • On the other half, spread out the chopped bacon as well as possible.
      8 ounces bacon
    • Cook in the middle of the oven for 15-20 minutes, until gnocchi is soft and bacon is cooked.
    • Bring out the pan from the oven and top with Parmesan cheese, then mix everything together. Serve immediately!

      The picture shows bacon? Where is the bacon in the recipe? And why put everything in the side of the pan? Sounds weird and I didn’t. Recipe tasted good but bland. Is missing something

        Hi Mayte! Not sure what you mean. The bacon is included both in the ingredient list and the recipe instructions. The reason you push everything except bacon to one side of the pan is so that the bacon will cook properly. Did you not use bacon? If so, that's probably why it tasted a bit bland... /Emmeline

      This was a great recipe that my family loved with a few additions. I added chopped onion along with the mushrooms and Italian seasoning and oregano. When it came out of the oven, I added some chopped baby spinach then mixed with the cheese. It was delicious!
