These Double Chocolate Chip Muffins are a chocolate lover’s dream – with cocoa powder, white chocolate chips and a pinch of salt they’re moist, flavor packed and so easy to make – without being all too sweet. No fancy ingredients needed – just grab a bag of chocolate chips and the rest you probably already have at home.

Why these are the best chocolate muffins?

They are:

  • Easy – no fancy steps or equipment needed
  • Quick – you can have a batch ready in just 25 minutes
  • Filled with a double dose of chocolate – satisfying any chocolate craving
  • So soft and moist – thank the room temperature butter for that
  • Not too sweet – but definitely sweet enough
  • Still delicious a few days later – if you manage to keep them for that long
  • Balanced by a pinch of salt that takes the edge of the sweetness while deepening all those chocolate flavors

What you need

No fancy tools needed here, but if you have a muffin tray you will want ot use it. If not, just use a regular oven tray. Otherwise two mixing bowls, measuring cups and spoons, a whisk, some muffin liners and a couple of spoons will go a long way.

As far as ingredients go you will need:

  1. Flour
  2. Baking powder and fine salt
  3. Milk
  4. Cocoa powder
  5. White chocolate chips or milk chocolate chips
  6. Eggs
  7. Sugar
  8. Salted butter at room temperature, cut in pieces

How to make them

To make these muffins start by setting the oven for 200 C/400 F and bringing out two mixing bowls.

  1. Add all dry ingredients except sugar to one of the mixing bowls
  2. Mix
  3. Add in 2/3 of the white chocolate chips
  4. Mix again, then set aside for now

  1. In your other mixing bowl, combine room temperature butter cut in pieces with sugar
  2. Mix well, using an electric whisk if you have one
  3. Add the eggs

  1. Add the dry ingredients you mixed together previously, and the milk
  2. Then mix well until the batter is even and all the ingredients are combined. Do not use an electric whisk! This can break apart the chcolate chips.

Time to make your muffins!

  1. First, plase 12 muffin liners in a muffin tray, if you have one. Otherwise space them out on a regular oven tray.
  2. Scoop in the muffin batter, filling the liners about 2/3 of the way.
  3. Top with the remaining white chocolate chips.
  4. Then stick them in the oven and bake for about 15 minutes – until a tooth pick inserted in the center comes out with no or just a tiny bit of batter on it.

Ingredients

  • dl flour
  • 1 dl cocoa powder
  • 1 tsp vanilla sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • dl white chocolate chips divided
  • 150 g salted butter room temperature, cut in pieces
  • dl sugar
  • 2 eggs
  • dl milk

Instructions

  • Set the oven for 200°C/400°F.
  • In a mixing bowl, combine all dry ingredients except sugar. Mix in ⅔ of the white chocolate chips as well. Then set aside for now.
  • In another mixing bowl, add in the room temperature salted butter in pieces together with the sugar. Mix well.
  • Add in the eggs to the butter and sugar, and mix well again.
  • Add the mixed dried ingredients and the milk to the egg, butter and sugar mixture and mix well using a spoon – not a whisk – until everything is combined.
  • Bring out a muffin tray or a regular oven tray and line with muffin liners. Scoop out the batter in the muffin liners using two spoons, and top with the remaining white chocolate chips.
  • Bake in the middle of the oven for 15 minutes. Use a tooth pick or cake tester to check when the muffins are finished – the tester should come out with no, or very little, batter on it. When done, remove from the oven and set aside to cool.
