Sour cream is key for this recipe - but I recommend adding another creamy component as well. I opted for cream, but you can also use milk or half and half. Or use more butter, to make a hybrid of this recipe and my mashed potatoes without milk.

1. Boil & Mash
Boil potatoes and mash them, then add butter and mash until melted.
2. Add Sour Cream
Fold in sour cream.
3. Make it Creamy
Add cream slowly, until you've reached your desired consistency. Then taste test, season with salt and pepper, and serve!
Tips For Best Results
Cut the potatoes in smaller pieces. This will help them cook faster, and save you time.
Peeling is optional. Peeled potatoes look better in mashed potatoes, but if you don't feel like peeling them that's also fine. Just make sure they're well scrubbed & clean!
Heat the cream. You can use cold cream, but that will cool down the mashed potatoes. Instead use hot cream so you can serve the mashed potatoes really hot and nice.
Don't add all the cream at once. Depending on the potatoes you use and how well you drain them - as well as what consistency you prefer for your mashed potatoes - you might need to use more or less. Start with a little, and go from there!
Don't forget to taste test. Taste testing is super important - for this recipe you can add more butter, sour cream, salt and pepper if you like.

Cheesy Mashed Potatoes
- 2 lb potatoes peeling optional, cut in smaller pieces
- 1 tablespoon salt for seasoning potato boiling water
- ¼ cup salted butter
- ¼ cup cream or milk/half and half; hot
- ¼ cup sour cream
- ½ teaspoon fine table salt or according to taste
- ½ teaspoon ground black pepper or according to taste
Instructions
- To start, boil the potatoes in a large pot with salted water until tender, then drain them. Meanwhile, heat the milk until almost boiling.2 lb potatoes, 1 tablespoon salt, ¼ cup cream
- Mash the potatoes, then add butter and keep mashing until the butter is melted and well mixed in.¼ cup salted butter
