I love baking brie! Not only is it very delicious - it's also super easy. So next time you're expecting guests and don't know what to make... this is it! You can bake it in your air fryer, or in the oven - head over to this guide if that's what you prefer.
I top mine with honey and salt flakes for that perfect mix of sweet and salty. I also add whatever nuts, seeds and dried fruit and berries I feel like. Adapting these is an easy way to make it suit any season and any type of gathering!

Brie Is the Star of This Show
You want a nice wheel of brie for this recipe, since it needs to be intact on all sides. This means you can't use a wedge of brie.
You can however choose whatever size you like for your wheel of brie. And if you can't find one small enough, you can often find smaller camemberts - and this will work just as well!
Keep in mind if you use a smaller or lager brie this will impact the cook time. Just keep an eye on it and you'll be fine!
Some bries are softer and others are harder. This means they will be done in different amounts of time. Poke it gently to check if it's done - if it is it should feel soft when poked.
Choose Your Favorite Fruits & Nuts
I made this version with dried apricots and chopped hazelnuts, but you can choose whatever dried fruits, nuts and seeds you prefer. I made another version with cranberries, hazelnuts, almonds and pumpkin seeds - this is a great option for the holidays.
How to Bake Brie in Your Air Fryer in 3 Simple Steps
1. Prep
Start by prepping your air fryer by placing a piece of aluminum foil in the bottom of the air fryer basket. You want it to be a bit bigger than the cheese, so you can use it to lift it out when it's done.
You can also use a silicone liner, just make sure it's large enough that you can use it to lift the brie out. Parchment paper also works, but you will likely need to use 2 spatulas to get the cheese out without breaking apart.
Then place the cheese in the basket, and cut a criss-cross pattern on top. You want to cut through the rind and into the cheese just slightly. Be careful not to cut into the sides as this can cause the cheese to start to leak out.
2. Top It
Pour over half the honey, then add dried fruit and nuts, followed by the rest of the honey and the sea salt flakes.
3. Bake It
Bake in the air fryer until the cheese is soft but not leaking out. Keep an eye on the fruit so it does not burn. A bit of color is great, just not too much.
What to Do with Leftovers
Baked brie is best eaten straight away. But it is possible to store leftovers as well, and reheat to enjoy the cheesy goodness another day.
Storing: Store leftovers in the fridge in an airtight container for up to 4 days.
Freezing: I do not recommend freezing leftovers.
Reheating in microwave: Reheat leftovers in the microwave in 30-second increments, until nice and melted again.
Reheating in the air fryer: I do not recommend reheating in your air fryer unless you have an air fryer safe dish or container. The cheese will melt and without the rind to keep it together it will quickly spread.

Air Fryer Baked Brie

- 1 lb round brie cheese or camembert; see notes
- ¼ cup liquid honey or solid honey microwaved to make it liquid
- ½ cup mixed nuts and seeds chopped; hazelnuts, almonds and pumpkin seeds are great options
- ½ cup dried fruit and/or berries apricots, cranberries, blueberries are good options
- 1 teaspoon salt flakes slightly crushed
Instructions
- Place the cheese on a piece of aluminum foil (or use a silicone liner of appropriate size). Make sure the piece of foil is a bit larger than the air fryer basket. Using a pairing knife, score a criss-cross pattern on the top of the brie. You want to cut just through the outer layer. Be careful not to cut into the sides of the cheese, as this can make the cheese "leak" when baking.1 lb round brie cheese
- Place the cheese on the aluminum foil in the air fryer basket. Fold up the sides of the foil so it fits.
- Pour over half the honey, followed by chopped nuts and berries. Then add the rest of the honey before finishing with the sea salt flakes.¼ cup liquid honey, ½ cup mixed nuts and seeds, ½ cup dried fruit and/or berries, 1 teaspoon salt flakes
- Bake 5-10 minutes at 350 °F until the cheese is soft to the touch. Carefully lift the foil with the cheese on it out of the air fryer basket.
- Serve with a side of bread or crackers. Cut into the cheese, and dip bread and crackers in the melted cheese.
