This easy vegetarian sandwich with vegan olive tapenade without anchovies is the perfect weekend breakfast. Topped with feta cheese & chopped jalapeño it's a filling breakfast or snack that brings loads of flavor and a spicy kick to end.
You might remember that a while back, I spent some time trying to come up with a delicious vegan tapenade recipe. A tapenade, that is, with all of the taste but none of the anchovy. As you might also remember - in my opinion, I totally succeeded.
The reason for the whole tapenade project? This sandwich.
I had something similar at a restaurant and just knew I had to recreate it. Their version was vegan with a vegan cheese that even I couldn't tell was not actually Feta cheese - and while I was fine with making a vegetarian version instead of vegan, I was not fine with those damn anchovies.
Anyway. I created a vegan tapenade that in my mind is better than any anchovy-version I've ever had - and as if you can't find a 1000 ways to use it already, here's a delicious, filling weekend breakfast where it really gets to shine.
Why I love this sandwich for breakfast
- It's a truly filling breakfast - no getting hungry after an hour when you just devoured this one!
- It combines some of my favorite flavors: salty Feta cheese, umami-rich tapenade & a spicy kick to finish.
- It's super quick to make - and quite quick even with the homemade tapenade (which adds 5 minutes to it all) , especially considering you only need to make it once for every 6 sandwiches you make!
How to make a tapenade sandwich
When it comes to cooking, there's easy - and then there's easy. Yes, I suggest you make your own tapenade for this - but you know what? You don't have to. You can buy it as well. Just make sure to check the ingredients since most of them contain anchovies - so if you want to make this sandwich vegetarian you will need to find a vegan/vegetarian tapenade to go with it.
Otherwise, making your own tapenade only takes 5 minutes so that's a truly legit option too.
And once you have your tapenade? It's as easy as rosting a slice of sourdough bread (or whatever bread happens to be lying around in your kitchen), spreading a generous amount of tapenade on top, crumbling over a good dose of Feta cheese and - finally - topping with some chopped jalapeño. Done!

- 1 slice sourdough bread roasted
- 3 tablespoon vegan black olive tapenade
- 50 g Feta cheese* crumbled

Instructions
- Start by roasting your sourdough bread.1 slice sourdough bread
