    Cucumber Tom Collins Mocktail

    Make this healthy Tom Collins mocktail in just 5 minutes with 3 ingredients. The most refreshing mocktail you'll ever have is just as delicious as the original - but less sweet. Cucumber, lemon & soda water is all you need!

    Why you will love it

    • It's easy - just puree cucumber, mix with lemon juice and top with soda water

    • No fancy equipment needed - I use a blender and a shaker, but you can make it without both

    Ingredient notes & substitutions

    • Soda water can be switched for another unflavored sparkling water
    • Lemon needs to be fresh - save the bottled kind for something else
    • Cucumber - if you enjoy cucumber flavor it can be worth it splurging on a nice, organic and locally sourced cucumber as these tend to have more flavor
    • Toothpick is used to create a decoration for the mocktail and can be skipped

    How to make it

    1. Start by peeling the cucumber and cutting it into smaller pieces, then add these to a blender. Blend for a minute or so until there are no large pieces left.
    2. Pour the cucumber puree into a tumbler
    3. Squeeze in the lemon
    4. Close the lid tightly and shake for 15 seconds

    1. Fill up a highball glass with ice cubes
    2. Remove the top lid from the shaker, and pour the cucumber and lemon over the ice through the shaker's built-in strainer
    3. Fill up with soda water
    4. If you like, decorate with a slice of cucumber and some cucumber peel on a tooth pick

    Tips & tricks

    • Make it sweeter by switching soda water for sprite
    • Make it less sour by reducing the amount of lemon juice
    • Make it a cocktail by adding a shot of gin or vodka before shaking

    Can I make this ahead of time?

    You can make it almost all the way ahead of time - just don't top up with soda water until just before serving.

    Can I make this without a blender?

    Yes, you can either puree your cucumber in a food processor or with a handheld immersion blender - or just smash it up with a muddler or something else you have on hand.

    Can I make this without a shaker?

    Yes - two ways:
    1. Shake it in a glass jar instead (remember to close the lid tightly) and then strain into the glass
    2. Strain the cucumber puree into the glass straight away and and then mix together with the lemon juice before adding ice cubes

    What glass should I serve a Tom Collins Mocktail in?

    A Tom Collins is traditionally served in a Highball or Collins glass (which to the untrained eye look the same), and I used a highball glass for the pictures here.

    You can serve it in another type of glass as well. For example, this cucumber version looks amazing in a martini glass. Just add a few ice cubes when shaking the cucumber and lemon juice and then pour straight into your martini glass before topping up with soda water.

    Ingredients

    • ½ cucumber peeled
    • 1 lemon juice of
    • 3 ounces soda water

    To serve

    • ice cubes
    • cucumber and tooth picks for decorating, can be omitted

    Instructions

    • Puree the peeled cucumber in a blender until there are no large cucumber pieces left.
      ½ cucumber
    • Pour cucumber puree and lemon juice into a shaker, close and shake for 15 seconds.
      1 lemon
    • Place ice cubes in a highball glass and pour over the cucumber-lemon mixture. Top with soda water and decorate as desired. Serve immediately!
