    Puff Pastry Pizza with Blue Cheese, Apples & Kale Chips

    Puff Pastry Pizza is an easy & delicious way to make pizza - here it's salty, savory & subtly sweet, topped with a mild blue cheese, sliced red apples, green asparagus and crumbled up kale chips. A perfect dinner, appetizer or snack!

    Have you ever had puff pastry pizza? It's such a great way to make a pizza - really quickly. Especially since you can always have the frozen sheets on hand. And did I mention it comes out delicious?

    Ingredient notes & substitutions

    • Kale - make chips first (instruction included below) or add it fresh. Either way, make sure to remove the hard stem and use only the leaves.
    • Blue cheese - a cheap kind is fine. Note: some blue cheeses are not vegetarian.
    • Olive oil - can be swapped for a neutral vegetable oil
    • Asparagus - make sure to remove the harder part of the stem - here's a guide for how to do it
    • Puff pastry - I always use store-bought, frozen, puff pastry but you can of course make your own as well

    How to make it

    You have a choice to make for this recipe. The very best version has kale chips crumbled on top just before serving, but since kale chips take a while to make I've also included instruction for how to make this without making the kale chips first.

    How to make kale chips

    If you want to skip the kale chips, still follow steps 1-4 below to season and massage the kale - then go straight to making the pizza.

    1. Preheat the oven for 300°F (150°C) , place kale in a bowl and pour over olive oil
    2. Season with salt
    3. Squeeze over lemon juice
    4. Massage the kale with the seasoning for a few minutes - this is important for the chips to not get chewy
    5. Spread out the kale on a baking tray lined with parchment paper
    6. Bake in the middle of the oven for 15-20 minutes, checking once after 15 minutes to ensure they're not burning. When done, take out and set aside to cool down and crisp up.

    How to Make Puff Pastry Pizza

    1. Preheat the oven for 440°F (225°C) and roll out the puff pastry as thin as you can. Place on a baking tray lined with parchment paper.
    2. Spread out the crème fraiche on top of the puff pastry and make a cut in each corner of the pastry
    3. Season with ground black pepper
    4. Place slices of blue cheese on top

    1. Add apple slices
    2. Add chopped asparagus
    3. If you've made kale chips: Bake for 15 minutes until the puff pastry is golden, then bring it out from the oven.
      If you're using fresh kale: Bake for 10 minutes then bring it out and top with the seasoned and massaged kale (see instructions for making kale chips above) and then place it back in the oven for 5 minutes and bake until puff pastry is golden.
    4. Bring out your puff pastry pizza and top with kale chips (if you made them), then slice and serve!

    Tips & tricks

    • Thaw the pastry halfway before rolling out, this is easier than rolling out a dough that's fully thawed
    • Save time by skipping the kale chips and using fresh kale instead
    • Make a cut in each corner of the puff pastry before baking, to maintain the shape of the pizza
    • Don't use too much crème fraîche as this can make the pizza soggy
    • Reheat pizza in the air fryer

    Recipe FAQ

    Why do I need to massage the kale?

    Massaging the kale breaks down the fibers, which makes it softer and nicer to eat. If you don't massage it it will likely end up a bit chewy. Still edible, but not as nice by far.

    Can I reheat it?

    Yes, this pizza reheats pretty well. The puff pastry stays flaky and crispy once baked and usually does so even if you reheat it the day after.

    What do I do with leftovers?

    Leftovers can be stored in the fridge in an airtight container for up to 4 days. If you know you will have leftovers, leave the kale off those pieces and add it just before eating (kale chips) or just before reheating in the oven (fresh kale).

    Ingredients

    Kale Chips with Lemon

    • 4 cups kale leaves washed and stem removed
    • 1 tablespoon olive oil
    • 1 pinch sea salt
    • 1 squeeze lemon juice

    Puff Pastry Pizza

    • 2 (4 oz) sheets puff pastry thawed half-way
    • 2 tablespoon crème fraiche
    • fresh ground black pepper
    • 1 cup blue cheese* sliced thin
    • 2 apples peeled and sliced thin
    • 5 green asparagus hard part of stem removed, chopped

    Instructions

    Kale

    • Place kale leaves in a bowl and season with olive oil, salt and lemon juice. Mix and massage your kale for a few minutes.
      4 cups kale leaves, 1 tablespoon olive oil, 1 pinch sea salt, 1 squeeze lemon juice

    Kale chips

    • Preheat the oven for 300°F (150°C) and line a baking tray with parchment paper.
    • Spread out kale on top of the parchment paper. Bake in the oven for 15-20 minutes, checking once after 15 minutes to ensure it's not burning. When done, take out and set aside to cool down and crisp up.

    Pizza

    • Preheat the oven for 440°F (225°C) and line a baking tray with parchment paper.
    • Roll out the puff pastry as thin as possible on the parchment paper.
      2 (4 oz) sheets puff pastry
    • Add one tablespoon of crème fraîche to each piece of puff pastry and spread out evenly.

    • Make a cut in each corner and season with fresh ground black pepper.

    • Top with blue cheese slices, apple slices and chopped asparagus.
      1 cup blue cheese*, 2 apples, 5 green asparagus
    • If using kale chips: Bake the pizza in the middle of the oven for 15 minutes, until puff pastry is golden. Then bring it out and top with kale chips, crushing them slightly in your hand as you add them.
      If using fresh kale: Bake the pizza in the middle of the oven for 10 minutes, then bring it out and top with the kale (seasoned and massaged according to instructions for kale chips). Bake for another 5 minutes, until puff pastry is golden. Then bring it out and serve.

    Note about servings

    This recipe makes 2 pizzas with 6 good-sized slices per pizza. This is enough for:
    • 2 people as a filling lunch or dinner
    • 6-12 people as an appetizer
    • 6-12 people as part of a buffet or tapas spread
