I've always loved the Canarian dish "Papas Arrugadas" - literally "wrinkled potatoes" - so I knew I had to create something similar. These Air Fryer Mini Potatoes are similar to those, but cooked in a completely different way.
What they have in common is that nicely wrinkled skin and the heavy salt seasoning, which makes additional sauces or seasonings redundant. But, of course, they are also delicious dipped in something like a Garlic Dipping Sauce and as a side for air fryer chicken leg quarters.

- Salt: There's a lot of salt in this recipe, which makes the end result delicious. If you want to, you can cut the salt in half, but you won't get that nice wrinkled skin.

- Wash potatoes and pat dry

- Air fry 15 minutes, shaking them around once after 10 minutes, until fork tender

- Preheat your air fryer by running it at 400°F (200°C) for 5 minutes.
- Wash the potatoes thoroughly, pat dry, then coat with olive oil and salt.1 lb baby potatoes, 1 teaspoon olive oil, 1 teaspoon salt
- Place in a single layer in the air fryer basket and air fry 10 minutes. Bring out the basket, shake the potatoes around, then air fry 5 minutes more. Check to make sure they are done and add more time if needed.
