Growing up, celebrations and family dinners meant one thing: Hasselback potatoes. They go great with most mains, especially if they're a bit "fancier": duck, rib eye steak, flank steak, pork chops and more. I make them almost as often as my Air Fryer Smashed Potatoes.
Being Swedish, I'm quite proud of this export, as it's probably the tastiest potato side you can ever make.
These Air Fryer Hasselback Potatoes follows the classic recipe my family has made for years: small potatoes covered in butter, seasonings, and to top it all off - a dash of Parmesan cheese. But what's even better with this version? We cook them in the air fryer, so they're done in about half the time.
You've never had Hasselback potatoes as good as these - try them, and I'm sure you'll agree!

What you need to make them
Ingredient notes & substitutions
- Small potatoes are best, as they cook quicker and allow for maximum flavor. I recommend peeling them, but you can also skip it.
- Grated Parmesan cheese: This is one of very few instances where I recommend using the pre-grated Parmesan cheese that comes in a can. You can use the fancy version as well, but the can is actually the best choice.
- Butter: Salted or unsalted.
- Garlic powder can be swapped for garlic salt, but then skip the salt
How to make them
- To cut the potatoes, place a potato in a wooden spoon, and make cuts as close together as possible, and no more than â…› of an inch (3 mm) apart
- Mix melted butter with salt, pepper and garlic powder in a small bowl
- Coat the potatoes on all sides with the melted butter mixture
- Place potatoes with the cut side up in your air fryer basket
- Air fry 15 minutes until golden and cooked all the way, or almost all the way, through
- Brush with the remaining butter mixture and try to get some of it in the cuts as well
- Top with Parmesan cheese
- Air fry 4-5 minutes more until Parmesan is golden and a little bit melted, but not burned
Tips & tricks
- Use a wooden spoon to slice the potatoes - this way you don't have to worry about slicing too far, the curved spoon ensures the cuts go just deep enough.
- If you don't have a wooden spoon you can use two chopping boards instead. Layer them one on top of the other, with a thin chopping board on top, and place the potato on the bottom one. Then hold it against the edge of the top one as you slice into it.
- Make the slices as thin as you can - the more slices, the more flavor!
- Don't overcrowd your air fryer basket - the potatoes need to be in a single layer, with some extra space for the air to circulate
- If you are making a lot of potatoes you will need to cook them in batches. Finish them all up until the point of adding the parmesan cheese, and then cook them in batches with Parmesan cheese as well - or pop them all in the oven.
- Don't burn the potatoes after adding the Parmesan. Keep a close eye on them by checking at least every few minutes.
- Option to top them with chopped fresh chives or parsley
Storing, Freezing & Reheating
Storing: Store leftovers in the refrigerator in an airtight container for up to 4 days.
Freezing: I don't recommend freezing leftovers.
Reheating: Reheat leftovers in the air fryer or microwave. Air fry 3 minutes at 350℉ (180℃) or microwave in 30-second increments.

Air Fryer Hasselback Potatoes

- 8 small potatoes peeled
- 3 tablespoon salted butter or unsalted + an extra pinch of salt
- 1 teaspoon garlic powder or garlic salt and skip the salt
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 tablespoon canned shredded parmesan or regular shredded parmesan
Instructions
- Preheat your air fryer by running it at 400℉ (200℃) for 5 minutes.
- Cut the potatoes by placing a potato in a wooden spoon, and slicing into it with a sharp knife. Make cuts as close together as possible, at least every â…› inch (3 mm). Make sure the cut does not go all the way through the potato, you want it to be intact at the bottom - the wooden spoon will help achieve this.8 small potatoes
- Melt butter and mix with garlic powder, salt and ground black pepper. Pour over the potatoes and gently mix to coat, using a pastry brush if needed. Save the leftover melted butter mix for later.3 tablespoon salted butter, ¼ teaspoon salt, ¼ teaspoon ground black pepper, 1 teaspoon garlic powder
- Place the potatoes in the air fryer basket and air fry 15 minutes at 400℉ (200℃), until they are cooked almost or all the way through.
- Brush the potatoes with the remaining butter mixture, then top with parmesan and air fry 4-5 more minutes at 400℉ (200℃). Keep a close eye on the potatoes so they don't burn - I recommend removing the air fryer basket to check a few times while cooking.1 tablespoon canned shredded parmesan
