    I'm not known for eating my vegetables - mostly because I can't be bothered to cook them. However, the air fryer makes the process so easy, even I will cook up some veggies once in a while!

    Ingredient notes & substitutions

    • Bell peppers: I like green for the bite and red for the sweetness, but you can use any combination of colors.
    • Olive oil: You can swap this for a neutral cooking oil.
    • Garlic: Can be omitted.
    • Dried thyme: Can be swapped for other dried herbs like basil, rosemary, oregano, or tarragon. You can also use a pre-made seasoning like French or Italian seasoning.

    1. Slice bell peppers thin
    2. Add olive oil and seasonings
    3. Mix well
    4. Air fry until soft and fragrant

    Expert Tips

    • Don't overcrowd the air fryer basket. You can have multiple layers, but don't fill the air fryer.
    • If you cook a big batch at once, the cooking time will be longer. I also recommend you mix it more than once while cooking.
    • Cook time can vary with your air fryer model

    Storing: Store leftovers in the fridge in an airtight container for up to 4 days.

    Freezing: Store leftovers in the freezer in an airtight container for up to 3 months.

    Reheating in air fryer: Air fry 2-3 minutes at 400℉ (200℃) until heated through.

    Reheating in microwave: Reheat leftovers in the microwave in 30-second increments.

    Ingredients

    • 1 green bell pepper or other color, sliced thin
    • 1 red bell pepper or other color, sliced thin
    • 2 tablespoon olive oil or neutral cooking oil
    • 1 garlic clove minced
    • 1 teaspoon dried thyme or other dried herbs
    • ¼ teaspoon salt
    • ¼ teaspoon pepper

    Instructions

    • Preheat the air fryer by running it for 5 minutes at 400℉ (200℃).
    • Coat the bell peppers in olive oil, followed by the seasonings.
      1 green bell pepper, 1 red bell pepper, 2 Tbsp olive oil, 1 garlic clove, ¼ tsp salt, ¼ tsp pepper, 1 tsp dried thyme
    • Spread out the bell pepper slices in the air fryer basket and air fry 8 minutes at 400℉ (200℃), mixing them halfway, until soft and tender.
