If you're tired of Potato Wedges, Mexican Potatoes, Smashed Potatoes and Baby Potatoes - don't worry, I've got a new potato side for you. These Air Fryer Steak Fries are similar to potato wedges, but a little bit crispier, and a great substitute for regular french fries.
Serve them as a snack on their own with your favorite dipping sauce (I like Dijonnaise or barbecue sauce), or as the perfect side dish for rib eye steak, duck, flank steak, chicken or salmon. Either way, they're a winner!

What you need to make them
Ingredient notes & substitutions
- Potatoes: Use medium or large potatoes. Starchy potatoes are best, especially Idaho or russet potatoes, or Yukon Gold potatoes which lie in the middle between starchy and waxy.
- Olive oil can be swapped for a neutral vegetable oil
- Additional seasonings can be added, for example dried or fresh herbs like rosemary, thyme or basil or paprika powder, garlic powder and/or onion powder.
- Grated Parmesan cheese, especially the pre-grated kind in a can, can be added for the final 5 minutes of cooking
How to make them
- Place potatoes in a bowl and pour over olive oil, mix until well coated
- Add salt and mix again
- Spread out in air fryer basket
- Air fry 20 minutes, shaking them around once halfway, until crispy and golden
Tips & tricks
- Peeling is optional. I prefer steak fries with the skin on, but you do you.
- For the crispiest fries, air fry in a single layer
- They're fine air fried in multiple layers, but might not turn out as crispy
- Allow the full 20 minutes to ensure ultimate crispiness. They might be done on the inside before, but they still need that extra time to crisp up really well.
- Cook time can vary with your air fryer model
Storing, Freezing & Reheating
Storing: Store leftovers in the fridge in an airtight container for up to 4 days.
Freezing: I don't recommend freezing leftovers.
Reheating: Reheat leftovers in the air fryer for 2-3 minutes, or microwave in 30 second increments. You can also use leftovers to make a Leftover French Fry Casserole.
Recipe FAQ
If your steak fries are not crispy, the most common reason is that you did not air fry them long enough. Make sure they are really golden before removing them from the air fryer, even if they're done on the inside before that.
It can also be due to the type of potato you used. Starchy potatoes give the crispiest fries, as compared to waxy potatoes.
Finally, if you overcrowd your air fryer basket or just cook them in multiple layers, this will make them less crispy.
No, in my opinion, this does not make a difference. I have tested both ways multiple times, and if anything, I find they come out better without soaking. Skipping the soak also saves time, so in my book that's a clear winner!
