I've always loved what my dad calls "French carrots" - basically Carrots Vichy, or carrots cooked with sugar and butter. It's always been one of my very favorite vegetables!
For this version we cook the carrots in the air fryer (easier!) and use honey (even better flavor!) for that sweet touch.
I for one know this is definitely going on the Thanksgiving menu this year!

What you need to make them
Ingredient notes
- Honey - use liquid or solid
- Salted butter is my preferred choice, unsalted works as well as we add a lot of salt at the end
- Baby carrots can be swapped for regular carrots cut in pieces
- Chopped parsley - frozen & pre-chopped is my go-to, so easy!
- Lemon can be skipped, but is nice to balance the other flavors
- Olive oil can be swapped for cooking spray
How to make them
- Add olive oil to baby carrots or spray with cooking spray
- Mix to coat
- Place carrots in air fryer basket and air fry for 8 minutes
- Place butter & honey in a bowl
- Microwave 30 seconds to melt, then mix well and squeeze in a bit of lemon. Let sit for 5 minutes before adding to the carrots!
- Toss carrots with butter && honey
- Add parsley & salt flakes
- Mix well, then allow to rest 5 minutes before serving
Tips & tricks
- Preheat your air fryer for best results
- Don't overcrowd your air fryer basket - it's fine if the carrots overlap a bit, but you shouldn't have multiple layers
- Shake the basket with the carrots halfway for an even cook
- Adjust cook time depending on the size of the carrots
- Cook time can vary with different air fryers
- Allow the butter & honey to rest to allow it to get some of its stickiness back, and so adhere better to the carrots
- Allow the finished carrots to rest for the same reason - maximum flavor!
- Store any leftovers in the fridge in an airtight container for up to 4 days
- Reheat leftovers in the air fryer for a few minutes

Air Fryer Baby Carrots (Carrots Vichy)

- 1 lb baby carrots
- ½ teaspoon olive oil or cooking spray
- 1 tablespoon butter
- ½ tablespoon honey
- 1 squeeze lemon juice
- 1 teaspoon salt flakes
- 2 tablespoon parsley chopped

Air Fryer Instructions
- Preheat your air fryer by running it at 400°F (200°C) for 5 minutes.
- Coat carrots with olive oil, or spray lightly with cooking spray. Place in air fryer basket. Air fry 8 minutes, shaking them once halfway.1 lb baby carrots, ½ teaspoon olive oil
- Meanwhile, melt butter and honey and mix together. Add squeeze of lemon and set aside for 5 minutes.1 tablespoon butter, ½ tablespoon honey, 1 squeeze lemon juice
- When the baby carrots are fork tender but not too soft, toss with the butter and honey. Mix in parsley and salt flakes, then allow to rest for 5 minutes before serving.1 teaspoon salt flakes, 2 tablespoon parsley
