I'm not a big fish person, but if there's one fish I love, it's salmon. More specifically, lemon pepper salmon. After baking it in the oven for years, then air frying it for a while and turning it into salmon patties, now I'm cutting it into pieces for an even better seasoning to salmon ratio.

What you need to make them

Ingredient notes & substitutions
- Salmon filet: buy skinless salmon fillets or separate the filet from the skin before cutting into pieces. Frozen is fine; thaw fully before cooking, or just enough to cut into pieces. If using partly frozen salmon, add 1 minute to the cook time.
- Lemon pepper can be swapped for another citrusy spice mix like citrus pepper
- Olive oil can be swapped for a neutral cooking oil
- Lemon juice needs to be fresh - not bottled
How to make them

- Season salmon
- Mix well, then cook immediately or marinate up to 15 minutes
- Place salmon chunks in air fryer basket
- Air fry 5 minutes, until cooked through
Tips & tricks
- Marinate up to 15 minutes for increased flavor
- Don't marinate longer as the lemon juice will start to "cook" and break down the salmon
- If you have frozen salmon and don't have time to thaw it, follow this guide instead.
- Cook in a single layer - if you run out of space, cook in batches
- Salmon is done when white and flaky on the inside - cut into a piece to make sure
- You can often eat salmon slightly pink in the middle - this depends on the quality of the salmon, so please check to make sure first
- Cook time can vary with your specific air fryer
- If your air fryer temperature stops at 400℉ (200℃) you can cook it at that temperature

Storing, Freezing & Reheating
Storing: Store leftovers in the fridge in an airtight container for up to 3 days.
Freezing: I don't recommend freezing leftovers.
Reheating: Reheat leftovers in the air fryer for 2 minutes.
Recipe FAQ
To keep salmon from sticking in the air fryer, either cook it skin on and skin-side down, or use a good deal of olive oil, like we do here.
If cooking it without skin, also do not to attempt to flip it or move it around until it's cooked through. Once cooked through, it will generally release from the air fryer basket without any trouble.
If your air fryer salmon is dry, you have likely overcooked it. Cook it shorter next time, and check on it regularly while cooking to know when it is done.

Air Fryer Salmon Bites

- 1 lb salmon fillet without skin, cut in bite-size (1-inch / 2.5 cm) cubes
- 1 tablespoon olive oil or neutral cooking oil
- 3 tablespoon lemon juice fresh squeezed
- 1.5 tablespoon lemon pepper or another citrusy spice mix
Instructions
- Place salmon bites on a deep plate or in a shallow bowl and mix with the oil, lemon juice and lemon pepper. Marinate up to 15 minutes, or cook straight away.1 lb salmon fillet, 1 tablespoon olive oil, 3 tablespoon lemon juice, 1.5 tablespoon lemon pepper
- Preheat your air fryer by running it for 5 minutes at 410℉ (210℃).
- Place salmon bites in air fryer basket and air fry 5 minutes at 410℉ (210℃), until cooked throguh or as done as you like it. Serve immediately!
